Kogane Sengan sweet potatoes, from Minami Satsuma in Kagoshima, and black koji (Kurokoji) are combined in an earthenware crock, then distilled at atmospheric pressure. This sweet potato shochu is full of flavor, having a sweetness that is both light and refined.
